Don’t let the name fool you, these huge pancakes come in at a whopping 290 calories for the entire recipe, they will not hulk you out. One time a friend and I added purple and green food coloring to them and called them Hulk Cakes, and the name stuck. These are the best protein pancakes you will ever have, quick, easy, and only 4 ingredients.

Drop some frozen wild blueberries into the batter while cooking, or add fresh blueberries on top for Blueberry Protein Pancakes

Personally, I think they’re better than real pancakes. Enjoy!

Try Egg Whites International Egg Whites in your protein pancakes!


1/2c. oats

1/2c. fat free cottage cheese

1/2c. Egg Whites International Egg Whites

2 packets or 1 heaping tsp stevia or splenda sweetener

Optional ingredients for toppings: blueberries, no-sugar added apple pie filling (THE best, below), peanut butter, bananas, 1 Tbsp maple syrup.

For some extra carbs, I added 1/2 c no-sugar added apple pie filling on top…drooool


Spray a small pan with coconut oil spray and heat over medium heat. Combine all ingredients in blender (I use a Magic Bullet Blender for everything, and I love it. Seriously if you’re still using a regular blender, you need to upgrade to the Bullet). Blend very well. In the pan, pour 1/2 the batter in and let cook until bubbles form on top, flip and let cook an addition 1-2 minutes. Repeat with the rest of the batter. Top with desired toppings and 1 Tbsp maple syrup. Enjoy!

In this “seasonal” version, I added 2 Tbsp pure pumpkin and dropped some dried cranberries into the batter
