Hi I’m Erin! I’m a Nutrition and Food Science Teacher, Fitness Competitor and student, currently working on my master’s in Nutritional Sciences. I received my bachelor’s degree in Kinesiology and Nutrition from Texas Christian University. Before becoming a teacher I worked in corporate nutrition as a weight loss counselor for many years, during which I helped hundreds of people lose weight healthfully through meal planning.

I’ve been competing in Fitness competitions since 2012, when I first started meal prepping to lean out for competition. Over the years I’ve perfected a ton of recipes to keep from getting bored with healthy meal prep.
